Diabetic-Friendly No-Bake Cookie Dough Bites

Craving something sweet? This is not your average cookie dough! These bites are packed with fiber and protein to help satisfy sugar cravings without the blood glucose spike.

Ingredients: 

1 (15 ounce) can chickpeas drained, rinsed

1/3 C oat flour

1/3 C no sugar added peanut butter

2 Tbsp. maple syrup

1 tsp. vanilla extract

½ tsp. cinnamon

¼ C cocoa powder

Directions:

Drain and rinse chickpeas. Add all ingredients to a food processer and process until a dough forms. Roll into one-inch balls and store them in the refrigerator for up to four days. This recipe makes about 20 servings.
